Using the correct pan size when cooking paella is a crucial part of creating a delicious dish. Paella pans range in size from a single portion pan to some that can be several feet wide and can feed over 100 guests. A paella pan is shallow, round, and wide. Its shape ensures the rice cooks evenly in one layer. When deciding what size pan you want, you need to ask yourself what the maximum number of guests you will likely be feeding will be and where you will be cooking (stovetop, grill, paella burner etc.). Your heat source can potentially limit the size of the pan (and in consequence the maximum number of guests) you can accommodate. Most paella pan retailers will provide a guide and range of guests that can be fed with each pan. Here is a basic guide (please keep in mind these numbers can change based on the chef advising you): 4 to 6 guests = 16-inch pan; 6 to 8 guests = 18-inch pan; 8 to 12 guests = 22-inch pan; 12 to 20 guests = 26-inch pan; 20 to 40 guests = 32-inch pan.
